Making Molasses – The Sweet Syrup

Vintage sorghum mill continues sweet syrup tradition by making molasses the old-fashioned way

Production of Lach-Host molasses is labor intensive.
Production of Lach-Host molasses is labor intensive. "We're the only ones making molasses who hand-strip the cane," Howard said. The cane is cut six inches above the ground (leaving behind the nitrogen-heavy part of the cane) and three joints below the head (avoiding starch deposits at the top of the cane). Nitrogen is what makes molasses dark.
