Golden Harvest Corn Bread

1 cup corn meal
1 cup all-purpose flour
1/4 cup sugar (optional)
4 teaspoons baking powder
1/2 teaspoon salt
1 egg
1 cup milk
1/4 cup shortening, soft

Sift together corn meal, flour, sugar, baking powder and salt in a large bowl. Add egg, milk and shortening. Beat with a rotary beater until smooth, about 1 minute. Bake in a greased, 8-inch-square baking pan in a preheated 425 degree Fahrenheit oven for 20 to 25 minutes. Serve piping hot with your favorite spread!
